Best Recipe Contest

February's winner is: Swedish Meatballs

• Submitted by quietman

This recipe comes from my mom’s Swedish side of the family.. still one of my favorite go-to comfort food recipes.
Yield: about 60 meatballs

Ingredients:
1 tablespoon butter
2 tablespoons minced onions
2/3 cup fresh bread crumbs
1 cup water
3/4 pound lean ground beef
3/4 pound lean ground pork
2 large egg yolks
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon grated or ground nutmeg
1/4 teaspoon ground allspice
4 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef stock
Fresh chopped parsley (for garnish)

Directions:
In a small, heavy skillet over medium-high heat, melt 1 tablespoon butter. Add the onions and saute, stirring often until soft, about 1 to 2 minutes. Remove from the heat and set aside
In a large mixing bowl, combine the bread crumbs and water. Let stand until soft, about 1 to 2 minutes. Add the reserved onions along with the beef, pork, egg yolks, salt, pepper, nutmeg, and allspice. Blend with wooden spoon or hands until smooth. Shape the meat into 1-inch balls; place on a large sheet pan to rest
In a large skillet over medium heat, melt 4 tablespoons butter. Cook the meatballs in batches of about 15 to 20 at a time and brown on all sides. Remove with a slotted spoon and drain on paper towels, then move to a serving platter. Cover with foil to keep warm
When all the meatballs are cooked, reduce the heat to low and add the flour to the skillet. Cook, stirring, until lightly browned. Slowly add the beef stock. Cook, whisking, until the gravy is thick and smooth. Pour the gravy over the meatballs and serve over egg noodles. Garnish with chopped parsley

Did you know a woman name Martha Thomas originally made the Cabbage Patch Kids and sold them at craft fairs? But when a man named Xavier Roberts eventually saw them, he started producing them himself. A lawsuit evolved that lasted 10 years as she had no copyright on her creations. She did receive a settlement after 10 years.

You never know what you'll learn on the Pony Up board contests!

We had several random contests with the tokens going to whoever answered correctly first, voting contests to determine who the best actors would be to portray Chad, Badger and Mecir, (check it out to see who won), caption contest, icon hunt, word search and a slogan contest for the Pony Up board, which was won by squirrel with her winning slogan of:

It is now the official slogan of the Pony Up! board!

1. What brought you to GoldToken, and how'd you choose your name for GT?

• I was on GoldToken for a long time as Carol91859, but due to work and family obligations, let my membership lapse. Clem3610 is part of my last name and street address.

2. What interests you most on GT? Do you have a favorite game?

• I love the contests and meeting new people. My favorite games are the Hangman games.

3. What state or country do you reside in? What do you think tourists should definitely see?

• I live in Massachusetts, which is filled with historical places to visit.

4. What hobbies do you have?

• I love to walk, and play on GT!

5. Children? Grandchildren?

• I am happy single. No children!

6. Do you work? What kind of work do/did you do?

• I am retired. I worked in the clerical field.

7. Any pets?

• I have a black cat named Buttercup.

• I am a female over 50.

9. Favorite food?

• I love Italian food, though I don't cook!

• I was in Las Vegas many years ago.

• My favorite season is Summer.

A young adult man in his 20's was attentively looking out the window of a train and shouted, "Look father at the trees and flowers , they are going behind!"

The father smiled at his son admiringly . A young couple sitting nearby couldn't help overhearing, looked at the young man's childish comment with empathy .

Excitedly, the young man exclaimed again, "Father, look at the clouds , they are running with us!"

The couple couldn't resist, saying to the old man, "Why don't you take your son to a good doctor , that maybe could offer some help to him?"

The old man smiled and said, "I did! I am just bringing him home from the hospital. My son was blind from birth, and he just got his vision today . I have always been so very proud of my son , but today my heart is rejoicing for him in leaps and bounds!!
