Apple Cider Donut Quick Bread
Prep Time: 20 minutes
Cook Time: 50 minutes
Total Time: 1 hour 10 minutes
Serves: 12

Ingredients
For the Bread:
2 cups apple cider

½ cup unsalted butter, softened

1 cup light brown sugar, packed

2 large eggs, room temperature

1 teaspoon vanilla extract

¼ cup unsweetened applesauce

3 tablespoons plain Greek yogurt

2 cups all-purpose flour

1½ teaspoons baking powder

¼ teaspoon baking soda

½ teaspoon salt

1½ teaspoons ground cinnamon

½ teaspoon ground nutmeg

For the Topping:
3 tablespoons unsalted butter, melted

½ cup granulated sugar

1 tablespoon ground cinnamon

Instructions
Reduce the Apple Cider:

Pour apple cider into a small saucepan and bring to a boil over medium heat.

Reduce heat to medium-low and simmer for 20-30 minutes until reduced by half (you should have about 1 cup remaining).

Remove from heat and let cool while preparing other ingredients.

Prepare for Baking:

Preheat oven to 350°F and grease a 9x5 inch loaf pan. Line with parchment paper for easy removal.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Make the Batter:

In a large bowl, cream softened butter and brown sugar with electric mixer until light and fluffy, about 3 minutes.

Beat in eggs one at a time, then vanilla extract until just combined.

In a small bowl, whisk together applesauce, Greek yogurt, and cooled reduced apple cider.

Alternately add dry ingredients and apple cider mixture to the butter mixture, beginning and ending with flour mixture. Mix just until combined - don't overmix.

Bake:

Pour batter into prepared loaf pan and spread evenly.

Bake for 50-55 minutes, or until a toothpick inserted in center comes out clean or with just a few moist crumbs.

Cool in pan for 15 minutes, then remove to wire rack.

Add the Coating:

While bread is still warm, brush melted butter over top and all sides of the loaf.

In a shallow dish, combine granulated sugar and cinnamon.

Sprinkle cinnamon sugar generously over the buttered bread, pressing gently to adhere.

Let cool completely before slicing, about 1 hour.

Storage: Keep covered at room temperature for up to 3 days, or wrap and freeze for up to 3 months.
