spacer40 Best Recipe Contest for December's recipe contest is: Homemade Spaghetti

Spaghetti is a long, thin, solid, cylindrical pasta. It is a staple food of traditional Italian cuisine. Like other pastas, spaghetti is made of milled wheat (sometimes enriched with vitamins and minerals) and water. The pasta is usually white because refined flour is used, but whole wheat flour may be added. Spaghettoni is a thicker form of spaghetti, while spaghettini is a thinner form. Capellini is a very thin spaghetti, while vermicelli refers to intermediate thicknesses.
You can make yours with or without meat balls,

(#5705645) "Guess" Meatloaf
Posted by JanuarySnowAngel on 17 Aug 2025 at 12:43AM
I call this the "Guess" Meatloaf because I can only guess at the quantities since I never measure.

Ingredients:
Ground Beef (about 1-1/2 to 2 pounds?)
Sliced Bread (about 2 or 3 slices?) - sogged up with warm water (then squeezed to release the water; pull apart into small pieces when ready to mix into ground beef.)
Eggs (2)
Quick Oats (3/4 to 1 cup?)
Season with Salt, Pepper, Onion Powder, Garlic Powder, and just a little Poultry Seasoning (maybe 1/2 tsp)
Ketchup

1. Mix all together with your hands until blended.
2. Shape meatloaf into oval (like a football)
3. Squeeze Ketchup over top of meatloaf (criss cross or your own design)
4. Bake at 350 for 45 minutes to 1 hr.

(I added the Quick Oats to my mom's recipe. It seems to make the meatloaf more moist.)

Nice option, especially for singles:
1. Instead of one large meatloaf, shape into smaller mini loaves
2. Put into glass casserole dish
3. Prepare two packets of dry beef gravy according to package directions. (no need to cook it.)
4. Pour the gravy mix over tops of the mini meat loaves. (Instead of ketchup)
5. Bake at 350 for about 45 minutes.

*Note: If you are prearing for just one or two people, you can freeze the quantities of mini loaves that you want, before baking and without the gravy mix. Add that after thawing and before baking, when ready.

This tastes so good with homemade mashed potatoes
