How about some macaroni cheese balls? These are crunchy and really good. Shape your leftover cold macaroni and cheese into 2-inch sized balls and place on a parchment-lined sheet tray. Grab a bag of your favorite potato chips. Place the potato chips in a gallon-sized zip-top bag. Using a rolling pin, gently roll over the bag to finely crush the chips. Pour the crushed chips into a shallow dish. Place 1 cup of flour in another shallow dish. Whisk two eggs in a small bowl. Roll each macaroni and cheese ball in the flour, then dip in the eggs, letting any excess egg drip off. Roll each ball in the crushed potato chips, firmly pressing the chips into the ball to create a solid coating. Return the balls to the baking sheet. Repeat to coat all of the balls. Fill a Dutch oven or large pot with oil to a depth of 2 inches. Heat the oil until a thermometer registers 350°F. Fry 6 balls at a time for 4 to 5 minutes or until golden brown and hot in the center. Drain on paper towels. Serve warm. Tip: If you are a dip lover, try these with ranch dressing. Mmm i'm gonna have to go make a batch because my mouth is now watering lol

It's so easy to make and it's totally delish. I've also made it with fresh spinach and it's come out really good. I make it just for my daughter and myself and can make a spinach dip sandwich. Almost like having Avocado Toast..

3 packages of frozen spinach defrosted and strained of liquids
2 packages of Knoor Vegetable soup mix
1 cup of Mayonnaise
1 cup of sour cream or plain yogurt
1 can Chestnuts diced
1 bunch of green onions chopped (Scallions)
1 large round sourdough bread cut out the inside part and cut into pieces

Method:
Mix mayonnaise, sour cream (or yogurt), and Knoor Vegetable soup mix till well blended and set aside.
Chop/dice Chestnuts, green onions and combine mayo/sour cream mixture with the chestnuts and green onions together and spinach together and place in fridge to "marinate".

Preparation of serving cut the bread and place the bread on large serving dish. Place the spinach mixture into the well of the bread, using it as a bowl. then place the cut up bread around the outer part of the serving dish and serve.

Ingredients
French baguette bread
Pizza sauce (jar or homemade)
Grated mozzarella cheese
Pepperoni slices / pieces (snack size pepperami works well)
Fresh basil leaves - chopped (optional)

Instructions
Preheat oven to 200°C / 400°F
Cut baguette into 3/4" / 20mm slices
Spread pizza sauce onto baguette slices
Sprinkle with grated mozzarella
Add pepperoni slices / pieces and a small amount of basil.

Place on a grill pan rack or cooling rack in oven with baking tray below.
Bake in oven for 8-10 mins

Hubby's Sausage Dip Cooking

Ingredients

1 roll Jimmy Dean Sausage { he gets regular } can get other flavors
2 Philly Cream Cheese { Block }
1 mild can Rotel


Directions
Brown and chunk up the sausage in frying pan
Add cream cheese and Rotel add a little milk so it's creamy
put in crock pot to keep warm
serve with Tostitos Scoops

That's easy to do ... slice or semi slice the date and stuff the combo of cream cheese and either shredded chedder, or any cheese you want and then wrap the bacon around it et al..

I like to bring bacon wrapped dates. They are so easy. Cut a bacon slice in half and wrap around a medjool date. Top with a jalapeño slice and hold together with a toothpick. Bake in a 375 degree oven for ten minutes and serve. They go quick.

Grease a 9-inch pie dish with butter or shortening and set it aside.
Place the graham crackers and brown sugar in a food processor and blend until the graham crackers become fine crumbs. While the food processor runs at low speed, gradually pour in the melted butter until the crumbs start to stick together.
Firmly press the crumbs into the bottom and up the sides of the pie dish, and place it in the freezer for 15-20 minutes, or until the crust is firm.
While the crust is freezing, whisk the milk, green food coloring, and mint extract in a large bowl until the food coloring is distributed evenly and the milk is green.
Add the vanilla pudding mix, and continue whisking until the pudding starts to thicken. Let the pudding rest for about 5 minutes to thicken up more.
Fold the whipped topping into the pudding until it is well mixed, then spoon the pie filling into the crust, and smooth out the top of the pie.
Place the pie in the freezer for at least 6 hours or until the filling is completely set.
Top with whipped cream and maraschino cherries, if desired, and serve cold.
Prep Time: 15 minutes | Freezing Time: 6 hours | Total Time: 6 hours 15 minutes
Kcal: 383 kcal | Servings: 8 servings

I have used Orange sherbet too

Dump in punch bowl and stir until sherbet melts



3.Green eggs and ham

Ham slices or you can use any deli slices
Egg salad
Bread
Mayo or mustard
Green food coloring

Mix some green food coloring into egg salad. Slices of bread add mayo or mustard, egg salad, ham slices.

My mom made this when I was a kid. Today I have made this for my kids. If you are Vegetarian you can substitute veggie slices for the ham.

4 eggs
1/2 soften butter
1 cup water
1/2 cup peanut butter can use little more if you like

Frosting 3 cups powdered sugar
1/2 cup peanut butter
1/2 cup soften butter
2 Tbsp milk

mix all together for cake and bake in 13x9 pan spray pan . 350 for about 25 minutes or till done
mix frosting all together and spread on top of cooled cake.. every yummy

1. _"Poor Man's Parfait"_

Ingredients:
2 - boxes of Raspberry Jello
1 - 16 oz. can of crushed pineapple (drained)
1 - 16 oz. carton of heavy whipping cream

Prepare jello as directed and allow to set.
When jello has set, stir jello well with large spoon.
Add the drained crushed pineapple.
In a separate bowl beat the heavy whipping cream.
When fully whipped, combine whipped cream, jello
and crushed pineapple mixture in a large bowl.
Mix well and chill before serving in sundae glasses.

This looks messy but tastes divine!
The REAL whipped cream is why this tastes SO GOOD!


2. Chocolate Bark

4 Large Hershey Bars
Bag of M&M's regular size or mini's

Melt the bars and spread on a small baking pan lined with wax paper.

Drop as many as you like of m&m's on top, let it harden then break into pieces.

Simple and good, you can also make a larger batch or a smaller one all year round.



3. Peanut Butter Cake and frosting

1 cup water
1/2 cup peanut butter can use little more if you like

Frosting 3 cups powdered sugar
1/2 cup peanut butter

1.Bundt Lemon Cake



3 cups sifted unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
8 ounces (2 sticks) unsalted butter
2 cups sugar
4 large eggs
1 cup milk
Finely grated zest of 2 large lemons

Glaze

1/3 cup lemon juice
2/3 cup sugar

Adjust an oven rack one-third up from the bottom of oven. Preheat the oven to 350°F. Butter a plain or fancy tube pan with an 11- to 12-cup capacity and dust it lightly with fine, dry bread crumbs.

Sift together flour, baking powder, and salt and set aside. In large bowl of electric mixer, beat the butter to soften it a bit. Add the sugar and beat for 2 to 3 minutes. Beat in the eggs individually, scraping the bowl as necessary with a rubber spatula to keep mixture smooth. On lowest speed, alternately add the dry ingredients in three additions and the milk in two additions, scraping the bowl with the rubber spatula as necessary and beating only until incorporated after each addition. Remove the bowl from the mixer. Stir in lemon zest. Turn the batter into prepared pan. Level top by rotating pan briskly back and forth.

Bake for 1 hour and 5 to 10 minutes, until a cake tester comes out dry.

Let cake stand in the pan for about 5 minutes and then cover with a rack and invert. Place over a large piece of aluminum foil or wax paper.

The glaze should be used immediately after it is mixed: Stir the lemon juice and sugar together and brush all over the hot cake until absorbed.


Let cake cool completely. Use two wide metal pancake turners or a cookie sheet to transfer it to a cake plate. Do not cut for at least several hours.

Best to make on New Years Eve.



2. Insta Pot Black-Eyed Peas for New Years


This dump-and-go recipe Instant Pot black-eyed peas recipe requires very little work on your part. I love anything that isn't a lot of work.

Ingredients
4 cups chopped smoked ham (about 1 1/2 lb.) 1 lb. dried black-eyed peas, rinsed
4 cups lower-sodium chicken broth
3 cups water
1 medium-size (about 12 oz.) yellow onion, Bnely chopped (about 1 1/2 cups) 2 medium (5 1/2 oz. total) carrots, chopped (about 1 cup)
1 dried bay leaf
1/4 tsp. black pepper
Chopped fresh Eat-leaf parsley

Heres my Insta Pot Black-Eyed Peas for New Years
This dump-and-go recipe Instant Pot black-eyed peas recipe requires very little work on your part. I love anything that isn't a lot of work.

Ingredients
4 cups chopped smoked ham (about 1 1/2 lb.) 1 lb. dried black-eyed peas, rinsed

On New Year's Day to signify that the year has come full circle and for good luck this year we would make a Bundt Lemon CakeSmiling

Cake

3 cups sifted unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
8 ounces (2 sticks) unsalted butter
2 cups sugar
4 large eggs
1 cup milk
Finely grated zest of 2 large lemons

Glaze

1/3 cup lemon juice
2/3 cup sugar

Adjust an oven rack one-third up from the bottom of oven. Preheat the oven to 350°F. Butter a plain or fancy tube pan with an 11- to 12-cup capacity and dust it lightly with fine, dry bread crumbs.

Sift together flour, baking powder, and salt and set aside. In large bowl of electric mixer, beat the butter to soften it a bit. Add the sugar and beat for 2 to 3 minutes. Beat in the eggs individually, scraping the bowl as necessary with a rubber spatula to keep mixture smooth. On lowest speed, alternately add the dry ingredients in three additions and the milk in two additions, scraping the bowl with the rubber spatula as necessary and beating only until incorporated after each addition. Remove the bowl from the mixer. Stir in lemon zest. Turn the batter into prepared pan. Level top by rotating pan briskly back and forth.

Bake for 1 hour and 5 to 10 minutes, until a cake tester comes out dry.

Let cake stand in the pan for about 5 minutes and then cover with a rack and invert. Place over a large piece of aluminum foil or wax paper.

The glaze should be used immediately after it is mixed: Stir the lemon juice and sugar together and brush all over the hot cake until absorbed.


Let cake cool completely. Use two wide metal pancake turners or a cookie sheet to transfer it to a cake plate. Do not cut for at least several hours.

Best to make on New Years Eve.

Things you will need

1 pie crust
1 package of butterscotch pudding
1 tub Kool-whip or whip cream
Several sticks of pepper mint candy

First blind bake the pie crust or use a cookie crust. Make the pudding. Put the pudding into the crust and cool it. Once cold add the whipped cream or kool whip and top with the peppermint candy.

Pecan Pie Brownies

Ingredients:

1 18 oz box Brownie box mix
3 Tbsp butter
1/2 C packed brown sugar
1/2 C light corn syrup
Kosher salt
1 C Roasted pecan halves
1-2 Tbsp Malibu Rum (or any booze you like)
2 large eggs

Directions:

1. Line an 11 X 7 inch baking pan with parchment paper. Bake the brownies according to the back of the box. Cool completely in the pan.

2. Preheat oven to 350.

3. In a medium pot on medium-high heat, add the butter, brown sugar, corn syrup and a tiny pinch of salt. Bring to a boil, then reduce to a simmer and cook util the brown sugar is no longer granulated, (2-3 minutes) Add the pecans and rum. Stir to coat, then remove from heat.
4. In a small bowl, whisk the eggs while spooning in a bit of the warm nut mixture until the eggs are warmed. When the eggs are warmed, whisk everything together until combined and pour over the brownies evenly.

5. Bake the brownies until the topping is set...23-25 minutes. Let cool completely before slicing. Sprinkle with a little of the salt if desired.

Watson - Graham Cracker Pieces

Serves: 6-8 Prep Time: 10 min. Cook Time: 10 min.

Honey Graham Crackers
1 1/2 cup chopped nuts
1/2 cup butter (1 stick)
1/2 cup sugar

Preheat oven to 350 degrees. Line a cookie sheet with foil and one layer of graham crackers.

Sprinkle the nuts evenly over the graham crackers.

Add the butter or margarine and sugar to a saucepan and bring to a boil for 3 minutes, stirring constantly.

Pour mixture over the crackers so that they are covered.

Bake for 8 minutes.

Cool and break into pieces.

1 cup peanut butter
1 cup powder sugar
1 tub cool whip
Mint candy crushed
Sugar cookie pie crust

Mix the peanut butter and powder sugar in a bowl until it is creamed. Add half the cool whip and fold it in. Put in the pie crust. Add the rest of the cool wrip on top. Place the crush mint on top.

In a separate microwave safe bowl, melt 1 ½ sticks butter and cool, so you don’t cook the egg.
Add in 1 egg
1 cup flour
1 cup sugar
½ cup of chopped nuts (pecans or walnuts) but this is optional

Mix then spoon and spread this mixture over the apples and bake for 30 minutes** or until a knife comes out cleanly and the apples are soft. Serve with vanilla ice cream or whipped cream. Refrigerate leftovers.

My oven runs cooler, so it took almost 45 minutes for our “pie” to be done. My sister’s took 60 minutes.


Any kind of apples has worked for me. Kind of nice to use a few leftover apples. You don’t grease the pan, you don’t add leavening, etc. I know that this seems like an odd recipe and if you are a traditional apple pie person, it won’t fit the bill, but it is a quick and easy version of apple pie and we really like it. I can’t remember the name of the person on Facebook that demonstrated it, but she has been making it for 20 years.

2 3.4 oz packages of vanilla instant pudding cheesecake flavor works well also
1 1/4 cup eggnog Do not use fat free, you want a thick eggnog
1/3 cup whole milk
1/2 tsp nutmeg
1 cup Whipped Topping Cool Whip is perfect
1 standard size graham cracker pie crust


Beat pudding mix with eggnog, milk and nutmeg for two minutes.
Fold 1 cup COOL WHIP Whipped Topping into mixture until just combined.
Spoon mixture into pie crust.
Refrigerate at least three hours, up to 24.
Make sure you are not using skim or fat free milk or eggnog, won't set as niceSmiling
The longer you chill this pie, the thicker it will get.

🌶️ For Cutting Board - Cream Cheese Recipe Contest
Ingredients:
    • Can of favorite chili (bean or no bean)
    • 1 8-ounce brick of cream cheese, softened
    • Tortilla chips
Method:
Place chili in medium pot and heat it up. Add softened cream cheese and stir till smooth and incorporated
Transfer to bowl and serve with tortilla chips. Can be put in fondue pot to keep warm

🥣 For Cutting Board Cream Cheese Recipe Contest
Ingredients:
    • 4 cups chicken broth
    • 3 lbs potatoes (peeled and cubed )
    • 1/4 cup onion (minced )
    • 1 clove garlic (minced)
    • 1/2 tsp seasoned salt
    • 1/4 tsp pepper
    • 1/4 tsp cayenne pepper
    • 8 oz cream cheese (chunked)
Directions:
Place all ingredients in pot except cream cheese. Cook until potatoes are fork tender. Smash a few for a thickener. Reduce heat to low add cream cheese stir until melted

    • Onion powder
    • Garlic power
    • Bread crumbs
    • Black pepper
Directions:
Place cream cheese in a bowl and allow to soften. Cream it and grade in mozzarella cheese, onion power, garlic powder, and black pepper (these are done to your taste)
Wash the peppers and wearing rubber gloves cut in half. Remove seeds and veins. Cut the cheddar cheese and put in the bottom. Add some of the cream cheese mix
Roll just the top in bread crumbs and put on a baking sheet. Bake at 350° F (100° C) until the top is a light brown and cheese is melted. Serve

Ingredients:
For the Graham Cracker Crust:
    • 1 ¼ cups graham cracker crumbs
    • ¼ cup unsalted butter, melted
    • ¼ cup white sugar
For the Filling:
    • 1 (8 ounce) package cream cheese, softened
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy whipping cream
    • 1 (12.5 ounce) can cherry pie filling (or other filling of your choice)
Directions:
Make the Crust:

Option:

For the cranberry jello

2 (3-oz.) packages raspberry Jell-O
1 1/2 cups boiling water
1 (20-oz.) can crushed pineapple in 100% juice*
1 (14-oz.) can whole berry cranberry sauce
3/4 cup cranberry juice
1 cup toasted walnuts or pecans, chopped & divided (I use pecans)


For the cream cheese topping

1 (8-oz.) package cream cheese, softened*
1 cup sour cream
1/2 cup granulated sugar


Dissolve the raspberry Jell-O in the boiling water.
Remove from heat and add the crushed pineapple (juice and all), whole berry cranberry sauce, cranberry juice, and your choice of nuts to the Jell-O mixture. Reserve a small amount of the nuts to sprinkle on top. Mix well.
Pour into a 9x13" glass baking dish and refrigerate until firm, about 2 hours.

For a lump-free cream cheese topping, first cream together the cream cheese and sugar with a hand mixer until light and fluffy. Then add the sour cream and whip until smooth.
When the cranberry jello mixture is firm, spread the cream cheese topping over the top. Garnish with additional chopped toasted walnuts or pecans. Refrigerate for about an hour to allow the topping to firm up.

Groceries for ONE is always a challenge for me. I end up throwing away a lot of food because it gets old before I have a chance to use it. That is especially true of a loaf of bread. So, this cream cheese recipe allows me to use the remaining bread before it goes bad. And it’s sweet! Win-win!
Ingredients:
    • 6-8 White bread slices w/crust cut off
    • 8 oz block of cream cheese, softened
    • ¾ cup confectioner’s sugar
    • 1 tsp milk
    • ½ stick of butter, melted
    • ½ cup granulated sugar
    • 1 tsp cinnamon
Directions:
1. Beat together softened cream cheese and confectioner’s sugar. (Add a little milk for spreading consistency)
2. Mix granulated sugar in a small bowl with cinnamon
3. One slice at a time, spread cream cheese mixture onto bread slice (somewhat thick)
4. Dip rolled bread slice into butter, then roll in cinnamon sugar mix
5. Place onto cookie sheet
6. Do this for each individual bread slice
7. Bake at 350° F for about 15-20 minutes
Notes:
    • Quantities should be adapted to the amount of bread slices you wish to use. May need to play around with portions. If it’s just for one person, you may wish to halve the recipe

Just take some fish fingers and slice up some tomato or red bell pepper for finger nails
